Christmas Cupcake
(± 12 cupcakes)
ingredients:
- 300g apricots, chopped
- 100g prunes, chopped
- 100g mixed raisins, chopped
- 80g candied fruit
- 100g dried fruit (I used Brazil nuts and walnuts), chopped
- grated zest of 1 / 2 lemon
- 200g plain flour
- 1 teaspoon (tsp) ground cinnamon
- 1/2 teaspoon (tsp) ground cloves
- 150g butter
- 150g brown sugar
- 3 eggs
- 1 teaspoon (tsp) baking powder
preparation:
Preheat oven to 180 ° C.
Beat butter with sugar until mixture is fluffy and light.
Add one egg at a time in a mixer. Add the lemon zest.
Add the sifted flour, already mixed with cloves, cinnamon and baking powder.
Mix the fruit with a wooden spoon.
Pour into molds or hoops of paper and bring to bake for about 45 minutes or until toothpick test comes out clean.
